6/2 Vegan Cowgirl BBQ Baked Beans
It’s the vegan answer to cowboy caviar, this delectable dish is a heartier version of the original baked bean rendition. Great side dish to pass for a party.
Ingredients:
1 28 oz. can of vegetarian baked beans ( we used Busch’s), drain off half of the sauce.
1 15 oz. can of black beans, drained.
3/4 cup of shredded vegan cheddar cheese divide into 1/4 cup and 1/2 cup amounts (we used Daiya cheddar cheese)
2 tbsp of bac’n bits (optional for smokey flavor)
1/2 cup of your favorite spicy BBQ sauce
1/8 cup of apple cider vinegar (an extra splash never hurt anyone)
Make it happen:
In a casserole dish, stir all beans together with a 1/4 cup of the cheese, bac’n bits, BBQ sauce and vinegar. Cover and bake in a 350 degree oven for 30 minutes or until bubbling in center. Remove from oven, uncover dish and sprinkle remainder of cheese on top of casserole. Bake uncovered for another 5 minutes.
This side dish is so smokey, rich and decadent your friends will swear you have fallen off the veg wagon.
We enjoyed the beans with Tex Mex vegan burgers topped with guacamole, jalapenos, green olives and a pinch of melted Daiya cheese to keep the toppings on the burger.
After this ranch style grub I lassoed Chloe (our Chihuahua) with my love, and smothered her with kisses.
