11/17 Gimme Five-Play in The Mudd Pie
There is something magical about coffee, Oreos and chocolate ice cream for me. Baskin Robbins once sold a coffee ice cream with Oreos in it. I was sure that they had gotten into my head. With that in mind I wanted to create a holiday worthy, Gimme Five dessert that would be ridiculously easy and cool enough to blow the socks off of your family and friends. That criteria says ice cream pie to me. Ice cream pies are so easy to create, yet they look as though they were made by a rock star chef.
The most exciting part about this dessert is that once you get the gist, you can make more and more exciting variations. You will need a vegan cookie or graham crust, ice cream of your choice and interesting toppings. The day I went to the store I found an Oreo cookie crust, so I went from there and picked out a quart of So Delicious Chocolate Velvet soy ice cream, a package of Oreos and I was good to go. I knew I already had instant coffee and semi sweet vegan chips in the pantry.
Here are a few other variations that I considered while picking out the ice cream. I let the available dairy free ice cream be my guide.
~Peanut butter ice cream topped it with roasted and salted nuts and a chocolate ganache in a cookie crust
~German chocolate cake ice cream topped with shredded coconut and chopped walnuts in a cookie crust
~Tofutti Vanilla Almond Bark topped with chopped, dark chocolate covered almonds in a cookie crust
~Green Tea ice cream in a cookie crust topped with chopped, candied ginger and pistachios. Why Not!!
Play in the Mudd Pie

Ingredients
Ready made Oreo cookie pie crust (baking section of grocery store)
18 Oreos (8 for bottom layer and 10 for top)
1 Quart dairy free chocolate ice cream I used (So Delicious Chocolate Velvet)
2 Separate servings of instant coffee granules (one for bottom layer and one for top)
8 Oz vegan semi sweet chocolate chips (4 oz for bottom layer and 4 oz for top)
Make It Happen
~Set ice cream on counter so it can soften enough to spread
~Melt 4 oz chocolate chips in a double boiler and stir in 1 serving of the instant coffee granules
~Spread evenly inside pie crust
~Rough chop 8 Oreos and sprinkle them evenly over chocolate in pie crust
~Once the ice cream is soft enough, spread evenly in pie crust. If it is still too frozen to spread easily over the Oreos than let soften a little bit more. The trick is to not let it get too soft because you will need to let it refreeze.
~Top with remaining 10 Oreos that have been rough chopped.
~Cover and let freeze for at least four hours.
When Ready to Serve
~Melt remaining 4 oz of chocolate chips in double boiler. Stir in 1 serving of instant coffee granules.
~Cut the pie when very frozen to achieve a nice clean cut.
~Drizzle coffee chocolate sauce over pie (or individual slices) in a cool way using a fork (easier than a spoon)
~Stand there looking as smitten as a kitten as your family thinks you fell off the vegan wagon with this ice cream masterpiece.

Wow! Your photos are truly mouthwatering. I’m going to try making this with Newman-Os (in place of the cookies and the pie crust), so that it’s free of high-fructose corn syrup, hydrogenated fats, and also so that it’s vegan (there’s whey in the Oreo pie crust.) I might also use Arrowhead Mills graham cracker pie crust (although it’s not chocolate), but I think it would still be delicious!
Using green tea ice cream is a fabulous idea, too! I am so addicted to So Delicious green tea coconut milk ice cream. It would be amazing with chocolate! Thank you for the inspiration. I sense an ice cream cake in my immediate future.

Gail, thank you so much for your kind words and for the substitution ideas. Sounds perfect. I did not find whey in the ingredient list of the Oreo pie crust. Is it called something else? I am a newbie vegan and am not always familiar with the alias names for dairy. When you make an ice cream pie send along some photos to share!

It really turned out amazing. It was so easy to make that the most difficult part was stopping at one piece. So Delicious ice cream is out of this world. I am grateful for them with every scoop I enjoy!

Whey is easy to miss on any ingredients list, as it’s such a tiny word! I often reread an ingredients list on an unfamiliar product many times over, just to make sure it’s not in there. Other animal-derived ingredients you want to beware of are: casein, calcium caseinate, albumin, and gelatin (to name a few.)
I also noticed high-fructose corn syrup and partially hydrogenated vegetable oil, which are both highly unhealthful, and BHA and TBHQ, which I’m extremely skeptical of, so I’d recommend the substitutions, even if the whey wasn’t in there.

Thank you so much for your thoughtful comments. Did you know that you have revealed a mystery? Three of us have now scoured the label from the Oreo pie crust and whey is not listed. It is however, listed on the Nabisco site showing the ingredients of this same product as you shared, which is quite the curiosity. We’ve contacted Nabisco inquiring about this dilemma and now await their reply. Hmm, vegan or not? Which is it Nabisco? We’ll share when we hear from them and learn more. I appreciate your diligence and willingness to share.
