11/18 Gimme Five-Black Bean and Corn Salad
I made this salad on the fly when I found out that a friend of ours was joining us for dinner. We were out of traditional salad fixins and were having burgers on the grill. I thought this would be the perfect accompaniment and I had all of the ingredients on hand.
Ingredients
1 Can of black beans drained and rinsed
1 Can of corn drained and rinsed
2/3 C chopped cilantro
2/3 C chopped black olives
3 Tbsp of your fave dressing ( I used a garlic vinaigrette)I also thought it would be great with just a squeeze of lime, sea salt & black pepper.
Make It Happen
~Toss everything in a bowl, chill and enjoy
This salad was perfect with our burgers, but I also thought it would make a scrumptious taco or burrito filling when warmed. You could also toss it with mixed greens for a tasty taco salad. It is quick, easy and the flavors are bright. Enjoy.
So this is our first vegan Thanksgiving. We have always created our own traditions and this year look forward to creating even more. I am however without a solid replacement recipe for green bean casserole….my all time fave. If you have rocked this vegan style, please share your secrets.

That looks great! I make a similar salad by using corn and beans and adding some edamame and cherry tomatoes.
