11/19 Gimme Five-Breakfast Sliders
I go to sleep at night looking forward to breakfast. Leaving the house without breakfast would be tantamount to leaving without a top on…I just wouldn’t do it. Sometimes I crave oatmeal or smoothies, while other mornings I wake up wanting savory things like hummus or left over Tofurky. On weekends, breakfast can stretch out and include tofu scrambles or pancakes and usually Mimosas.
Sandy designed these breakfast savories to emulate the feel of a lazy Sunday brunch while providing the efficiency of a Monday morning.
Breakfast Sliders

Ingredients:
1 14oz package of Gimme Lean ground sausage
1 8oz package of Pillsbury reduced fat ready to bake crescent rounds dough
6 slices of vegan mozzarella cheese
6 black olives, sliced
6 teaspoons of green enchilada sauce
Make it Happen:
Cut the sausage roll into 1/2 inch thick patties. This package will yield about 10 patties total, so you will have a few leftover. Saute on medium low heat for about 10 minutes, turning once or twice until brown on both sides and heated through. Meanwhile, preheat the oven to 350 degrees and “pop” open the crescent rolls. Leave the roll as a log and cut it into twelve (approx. 1/2 inch thick) medallions.
Spray a 6 muffin tin pan with non-stick oil and put 6 of the dough medallions in the bottom of each muffin cup. Then, put a sausage patty (or part of one, depending on how large they are) as the next layer. Then a mozzarella slice on next. Put one of the sliced olives on next. Sprinkle one teaspoon of green enchilada sauce on each. Finally, top with a dough medallion and press down to keep everything neatly inside its cup.
Bake for 11-13 minutes.
These are yummy, have a bit of a zest to them with the enchilada sauce and are still savory breakfast material. OR, you could easily prepare them for an appetizer at a cocktail party and impress others who will not believe they are vegan. Try other variations like asparagus, mozzarella, dill (with or without the sausage), even with tofutti cream cheese, cinnamon powder and a fruit compote for a sweeter treat. Go crazy, these are so simple to make and are perfect two or three bite morsels.

These look so comforting and yummy!

They were SO yummy like a hug in the morning. We have never made them before and after the first bite they were my fave breakfast comfort food.
