11/23 Fresh Cranberry Sauce
I love cranberry sauce from a can and am not ashamed to admit it. I crave cranberries with my Tofurky and have not yet tasted a fresh sauce that I love as much as a good solid can of whole berry sauce. It is like survival food because it comes out of the can looking like the can. Who cares….edamame looks strange too and we all love that.
So yesterday I set out to put a more healthful twist on this holiday must have.
Fresh Cranberry Sauce

Ingredients
1 12 oz bag of fresh cranberries
1 10.5 oz can of mandarin oranges in mandarin orange juice (do not drain)
1/4 C cranberry juice (I used cran-raspberry)
1/4 C + 2 Tbsp maple syrup (I used maple syrup agave blend)
1/4 C dried currants
Zest of 3/4 orange
Make It Happen
~Put all ingredients in to a saucepan
~Bring to a boil
~Reduce heat and let simmer for 20 minutes
~Chill and serve to your adoring fans
The obvious application of this dish is with Tofurky of any kind, but it would be amazing on biscuits, lemon sorbet, sweet potatoes, tofu steaks…..It is juicy and sweet and perfectly tart. Sandy is an anti cranberry sauce activist and this dish brought her to the dark side of cranberry sauce adoration. I hope you enjoy it as well.

You know what? I would be lost without canned foods too! And that picture of the canned cranberry sauce, very artistic! Love it I think it’s great that you gave a homemade version a go though.

Hi! I am learning lots about veganism from your blog…..I don’t know for sure about how vegan the recipe is I got when with you many years ago, but surely it could be. It is the cranberry relish from Zehnder’s of Frankenmuth and I make some every year and then eat it all myself! Yum!

That photo is just ridiculous! Unfortunately I don’t have acces to fresh cranberries where I live, but there’s lingonberries here… which I’m buying canned aswell I guess it’s okay to enjoy that stuff once in while without feeling ashamed…

a dash of Amaretto or brandy adds sauciness to your sauce. my aunt used to add whiskey!

Thank you for saying so Mary Beth. The cranberry relish from Zehnder’s was the true inspiration for this dish. Food holds such sense memories and Frankenmuth, Michigan has a hold on my heart.

Wow Nik, thanks for the fun family secrets. I appreciate the tip and will give it a go next time. Cranberry sauce is a year round treat as far as I am concerned.
