5/21 Daiya Cheddar Review & Recipe
In our kitchen, I am usually the idea man and Sandy is execution. I’ll say,” Hey, wouldn’t it be great if we had chicken in a green curry sauce with coconut and lime scented rice for dinner?!” She will start noodling the request and whip up the most amazing vegetarian version of whatever I suggested. Biscuits and gravy…got it, chicken pot pie better than grandmas…did it. It is like a Food Network game-show in our kitchen everyday. Sandy created the bbq chick’n pizza from one of my whims. You will not believe how easy it is to prepare and how absolutely divine it is!
BBQ Chik’n & Daiya Cheddar pizza
This recipe creates two large pita sized pizzas. Enough for a dinner for two or a fantastic appetizer for many.
2 large rounds of pita bread. (the ones we used were whole wheat and quite thin)
1 nine oz. pkg of Chik’n in BBQ sauce (We used Trader Joe’s Chicken-Less Pulled Chicken in sauce) You could also use 8 oz of Chik’n strips and add sauce.
1/2 cup Daiya cheddar cheese
1/4 cup of diced kalamata olives
1/2 cup of diced fresh pineapple
1/4 cup of chopped fresh cilantro
1 small orange pepper chopped (could use yellow or red)
1/2 cup of additional BBQ sauce, we used Open Pit regular
Pre-heat oven to 400 degrees
Warm Chik’n in microwave for 1 minute, open pkg and rough chop
(Use half of each of the ingredients listed above on each pita loaf)
Place pita loaves side by side on large cookie sheet
Spread additional BBQ sauce into thin layer on each loaf
Top with Chik’n, peppers, pineapple, cilantro and cheese.
(I seasoned the outer part of the pita loaf “crust” with a buttery spread, garlic powder and salt. Enjoy it plain or use your imagination for added flavor. Sesame seeds. Yum!)
Bake for 10-12 minutes until cheese is melted. These 2 individual pizzas are great for dinner or cut into smaller pieces to serve as appetizers.
The final verdict:
I really loved this cheese. It had a mild cheddary flavor and a cheese like mouth feel. It was melty and not rubbery. I thought it was excellent cold and even better hot. For a new vegan wannabe it felt like eyeing the lifeboat on the horizon.
It is soy free, trans fat free, casein free, dairy free, guilt free, cholesterol free…but joy full. Try some today and let me know what you thought.
