5/3 Food of the Gods
Happy Monday!
I have just been introduced to the most delicious super food. Our friend Jennifer brought over a batch of her Cashew Cream sauce. She made it with raw cashews and a handful of other things she threw in the blender (recipe is in the recipe category).
On Sunday night I made whole wheat penne with broccoli and toasted pine nuts. I treated the Cashew Cream like an Alfredo sauce. I warmed it up with a splash of original Almond milk, lemon juice, sea salt and lemon pepper. I tossed it all together and attempted to pass it off on Sandy (The greatest lover of all things cheese). It was decadent, rich and plate licking worthy. It was so phenomenal that I swear you could serve this to your Italian Grandmother with pride.
Today I used the Cashew Cream as a spread for a wrap. I marinated faux chicken in a lime vinaigrette dressing, Syrian spice and lemon pepper. Then I made a slaw out of (bagged) shredded white cabbage, balsamic vinaigrette and Syrian spice. I spread the CC on a flat wrap and loaded it up with the chicken and cool slaw. It was amazing! It was perfectly perfect and speedy to create.
I highly recommend Cashew Cream in every kitchen, vegan or otherwise. It is like eating the sun because of the all natural, fresh ingredients. You will never use mayonnaise or fakey/fatty Alfredo again once you have tasted this. You can eat it with veggies, you can eat it with crackers…you can eat it with your finger…I did. It makes a lot and only keeps for a few days in the fridge. So, whip up a batch and share it with your neighbor like Jennifer was lovely enough to do!
