Vegan Lemon Poppy-seed cookies

Vegan Lemon Poppy seed Cookies
Ingredients:
- ½ cup sugar
- ¾ cup brown sugar
- ¾ cup vegan butter (I used Earth Balance)
- ¾ cup soy yogurt ( I used raspberry)
- 1 ½ tsp vanilla
- ¾ tsp baking soda
- ¾ tsp salt
- Zest of one lemon
- Juice of one half lemon
- 2 ½- 2 ¾ cups flour (I used whole wheat oat flour)*
- ¼ cup poppy seeds
*Because my lemon was so juicy, I added a bit more flour which probably was the equivalent to the 2 ¾ c.
Make it happen:
Pre-heat oven to 350 degrees.
Cream together the sugar, brown sugar and margarine until smooth and creamy. Add the soy yogurt and vanilla and mix well. Add the remaining ingredients.
Drop by tablespoonfuls onto a cookie sheet and bake for 8 minutes, or until brown on the edges. I used parchment paper on my cookie sheets.
Notes:
I would definitely add more lemon zest.
The raspberry worked really well with the cookie but feel free to experiment
