6/10 Finding My Voice
Great news! Two of Sandy’s original recipes (Gazpacho Goddess and Vegan Cowgirl BBQ Baked Beans) made it to www.favediets.com. Because I submitted them under Exploits, they are credited on the site to me, but we all know whose genius it really was. We really are changing the world one meal at a time.
We are getting ready to go out of town again. This time to a bed and breakfast. I checked out the website for where we were staying (we did not choose the accommodations, they were chosen by a friend of ours) On the site, I saw that they offered a continental breakfast along with a hot dish like french toast or egg strata. Since neither one was a vegan option, I emailed the Innkeeper and inquired about vegan options. Turns out, not only is she more than willing to accommodate my needs, but said she had fridge available where we could store anything else we wanted to bring. In addition…they have grills available for their guests to use! Seriously! We can bring any vegan edibles we want and stoke up their BBQ! Absolutely amazing!~ Tofu Steaks for everyone!
This experience was so eye opening for me because in the past, I would have just gone without saying anything and had my coffee black (which I hate) and just eaten fruit, while my travel companions were feasting on a decadent breakfast.
Because I was willing to make my needs known, the Innkeeper was more than willing to meet my needs in abundance. Very cool!! It also helped me to realize that although a bed and breakfast or a room in a hotel with a mini fridge may be a bit more expensive on the front end…think of how much cash you are saving by bringing your own lunches and snacks. Both your body and your pocket book will thank you for planning ahead.
I feel so empowered for my first vegan mini break. Technically we are still in the hybrid stage (V.E. officially begins on June 30th) but I want to seize the opportunity to rock it out vegan because I am already 95% there.
Like we did for our last trip, we are packing fresh fruit, Tofurkey for sandwiches, Tofu steaks for the BBQ, hummus, and other munchies we love to have. I want to use my expendable income on things I love (vegan cupcakes and great wine) and not just on lunches out or snacks. I am setting myself , my new vegan lifestyle and my waistline up for success. We are bringing our bikes and plan to park the car and leave it there. In Michigan we wait eight months for summer to arrive. I am not going to let one moment of it pass me by!
