07/10 Dark Chocolate, Pecans & Salt, Oh My
I found a cookie mix at the grocery store that absolutely blew me away. It is called: Cherrybrook Kitchen Arthur Chocolate Chip Cookie Mix.
Yes, I am referring to Arthur, the beloved PBS animated mouse-like character. The mix is dairy free, wheat free and nut free (Which I won’t stand for). All you are obligated to add is vegan butter and water.
I took it a step further and added a handful of roughly chopped, roasted and salted pecans and a handful of vegan dark chocolate chips. Once the cookies were on the pan, I sprinkled coarse sea salt, very sparingly before baking. Something happened in that oven that has never happened before. Call it a miracle if you want. The immaculate conception of a cookie so divine yet so sinful, it had to be destroyed. The whole batch needed to be consumed immediately. It was a public health hazard to have them lying around willy nilly.
Yes, I thought they were that good. Why is dark chocolate and sea salt so good? Why do chocolate chip cookies photograph easier than broccoli or salads?
Sitting here looking at the photo of the cookies I so recently enjoyed
makes me feel a longing I almost don’t want to admit to.
They are buttery and soft, yet dense and short bread like. I used Earth Balance Vegan Butter. Yum. These will be the quickest and easiest vegan cookies you have ever made.

We have a batch of Cherrybrook’s brownies in the oven right now! They are fabulous. Next time we make some I’ll use your idea of tossing in a little extra chocolate. You can never have too much.

Tell us about the brownies! Are they as easy to prepare as the cookies? I bet they would be amazing with dried cherries and pecans or peanut butter!!

Hi Jennifer and GiGi, they were absolutely divine. They were in the aisle in Kroger that has the gluten free and sugar free. It varies by store where that is actually located, but that is where I found the mix. They were SO good and SO easy it was almost wrong!
