9/13 Soup Is On & Ticket Giveaway
Fall has peeked its head out in Michigan and we are enjoying sunny days with cooler nights. My cravings have started to move toward comforting soups.
Our farmers market had the most gorgeous peppers and tomatoes, so I made a Roasted Pepper Tomato Bisque that I think you will really enjoy. I used both roasted and fresh veggies so you can really taste the layers of flavor. The best part…it is so easy to create and chock full of vitamins and veggie love. While you are roasting veggies for the soup, add extra along with some garlic for the rest of the week.
Roasted Pepper and Tomato Bisque

Ingredients
7 Roasted tomatoes (I used Roma)
1 Roasted Hungarian wax pepper seeded
2 Roasted Peppers seeded ( I used yellow and red)
3 Fresh Tomatoes chopped
1/4 Cup Soy Creamer
1 Cup chick’n flavored or veggie stock
4 Cloves of roasted garlic
1/8 Tsp garlic powder
1 Tbsp Cumin
1 Tbsp Liquid Aminos
1 1/2 Tbsp Apple Cider Vinegar
1 Tsp Cayenne pepper
1/2 C fresh basil
Sea Salt and pepper to taste
Make It Happen
Put all of the ingredients in the processor of your choice and blend until creamy and smooth.
Garnish with fresh herbs of your choice. I used Oregano.
Enjoy heated or at room temp.
The soup is rich and hearty with a zip of heat and the freshie fresh taste of a perfectly ripe tomato.
Fantastic Giveaway
I have the opportunity to give away two tickets for the Dearborn Animal Shelter’s first ever No Beast Feast this upcoming Friday.
It is an all vegan/vegetarian Fall Harvest meal to benefit the Shelter, prepared with a hearty and healthy menu. I would love for you to join us. Dress is casual and we are going to have a ball. *Just a footnote. I have temporarily pulled the recipe for the raw Creamy Corn Chowder (post on 9/3). I took it straight from class and posted it. When I tried to replicate it, it did not come out the same as when we had it in class. As soon as I have perfected it I will post it again.

Hi Sherry,
My familly and I are really interested in the vegetarian lifestyle. We jumped in a few months ago, but we struggled a bit. My kids became bored with some of the foods. In order to be successful, I think we need to spend more time learning about the foods and all share in the learning process. Your recipe sounds wonderful for fall.

Thank you for sharing your feelings about your vegetarian journey. It can be challenging when you first begin. It is like any new thing that you are trying to learn..the right tools help, the ability to be flexible and open are always helpful. The Gardein products are so tasty and available at Kroger. They have a veggie substitute for many meats that we have eaten as meatatarians. They are easy to prepare and really yummy.
Morningstar Farms also has some of the best meat substitute products I have ever had. Their ground beef is second to none and their ribs are outrageous.
You may also use the pull down menu on the Exploits home page to get access to all of of our vegan recipes. They are easy to replicate and delicious. Continue to ask questions and to incorporate new things into your diet. Before you know it…you will have made the transition. Be gentle with yourself as you grow and learn new things with your family. It is your journey and no amount of time to transition is too long. Do the best you can and enjoy learning new ways to live compassionately with your family. The journey really is a large part of the fun.
