11/11 Skinny But Chunky Veg Soup
The first Michigan snow fall has come and gone . It was hardly a dusting but it still sent me reeling with the need to stock the pantry with cans of soup. It is my perceived protection against a winter chill (or a starving belly). It is like my survival plan. We make soup at home all the time but there are always times when I am ravenous, in a hurry and out of anything quick in the house. Enter canned soup that is actually a delicious and healthy choice.
Last night we tried Amy’s Fat Free Chunky Vegetable Soup. I was smitten right away because it is vegan, non GMO, flavor full and fat free. It has so few calories per serving that you could actually consume two entire cans for the caloric cost of one serving of many different canned soups. Sometimes…quantity matters to me!
The flavor is peppery like Minestrone and the broth is light but bold. It is packed with veggies as promised and has baby lima beans and peas. Yum. Your family will like this and you will too. It is lunch box friendly and quickie dinner worthy.
