11/8 Soul Satisfying Cocoa
Over the weekend we bought a new car, a KIA Soul. I fell in love with the stark white version and immediately thought it looked like a hand cut vegan marshmallow.
To honor such a lovely thought and our new sweet ride, I made up a hot cocoa concoction that is craveable and decadent. It is spicy and creamy and sweet and soothing. Simply put, it is soul satisfying.
Ingredients
1/2 C cocoa powder
1/8 Tsp cinnamon
1/8 Tsp pumpkin pie spice
1/16 Tsp ground cayenne red pepper
1/4 C soy creamer
4 C non dairy milk (We used Original Almond milk)
1 Tsp vanilla
2 Tbl Agave (I used dark)
1 Tsp maple syrup
Make it Happen
~Put all wet ingredients into a saucepan and cook on low heat stirring occassionally
~Mix all dry ingredients in a bowl with a whisk, making sure there are no lumps
~When vapors start to rise from the saucepan indicating that the milk is warm but not boiling, vigorously whisk in dry ingredients into milk until thoroughly combined
~Continue to warm and stir until desired temp. Do not boil.
~Serve in your favorite cup and enjoy.
Recipe makes four 8 oz. servings ( We enjoyed one each and stored the other two servings in the fridge for another occassion).

We have had it for a week now and I want to sleep in it. Every time I drive it I thank it.
