12/15 Mayan Slaw W/ Coconut Lime Vinaigrette
It was 9 degrees in Michigan today. It may have reached a high of 14 during the most balmy part of the afternoon. Chloe took refuge in the warmth of her blankie den while Sandy and I bought more Vitamin D to stave off insanity from early onset Cabin Fever and sun deprivation. To that end we decided to create a sunny slaw that would transport us (at least in our hearts and minds) to the Mayan Riviera. This salad has a fresh, zesty and brilliant bite. It tastes like you feel after an afternoon of snorkeling in the Gulf of Mexico…heavenly.
Mayan Slaw With Coconut Lime Vinaigrette

Slaw Ingredients:
1/2 cup broccoli
1/2 cup carrots
1/2 cup green cabbage
1/2 cup red cabbage
1/2 cup jicama
1/2 cup green bell pepper
1/2 cup radish
1/2 cup celery
1/2 cup avocado
1/4 cup of raw pepitas
Vinaigrette Ingredients:
The juice from 2 fresh limes
2 tbsp coconut oil
4 tsp agave syrup
1/4 tsp sea salt
1/4 tsp garlic
half dozen grinds of fresh ground pepper
Make it Happen:
~Evenly chop all the veggies so they are as close to the same size as possible. ~Toss together in bowl with pepitas and set aside.
~At room temperature, squeeze fresh limes into separate bowl. (I mention room temperature because the coconut oil will begin to congeal if it gets cold or the lime juice is cold when added. This can be corrected easily with a few seconds in the microwave.)
~Add coconut oil in liquid form, agave syrup, salt, garlic and pepper. Whisk ingredients together thoroughly.
Pour dressing over veggie mixture and toss well. Add extra salt and pepper to taste.
The beauty of this salad is that it will be amazing with any combo of veggies that you choose. Use what you have and enjoy. This combo comes in a ready to use bag at the Trader Joe’s grocery store in the produce section.
No Trader Joe’s in your area….use any veggies you love, chop them up and rock out the dressing with the Pepitas.

This is how she spend most of her days. You would never know how young she is because she is so perfectly lazy and content doing what our elderly doggie does….naps.
