2/12 Fresh Mint Mocha
This winter I have found that I have been craving two things almost daily, a really hot bath and a decaf, sugar free Peppermint Mocha with soy milk. The latter is kind of an expensive habit that I have not let myself indulge in that frequently lest I take out a personal loan to support it. So last night I made my beloved mint mochas at home with delish, healthy ingredients.
Fresh Mint Mochas

Ingredients
4 Tsp Cocoa powder (or more to taste)
1/2 C Fresh mint leaves torn into pieces (chocolate mint would be astounding in this)
2 Tsp Agave
2 C Non dairy milk of choice (I used unsweetened vanilla almond)
1 Tsp vanilla
Fresh brewed coffee (I used decaf) Add as much as you would like to create your perfect Mint Mocha
Make It Happen
~Warm milk, vanilla and agave in a saucepan
~Whisk in Cocoa and bring to a gentle boil
~Add mint leaves to pot ( I threw them right in but a spice bag would be ideal for this. It is a little cheese cloth bag that you can but herbs or spices in and close tightly.)
~Cook for a minute or two at a gentle boil
~Strain out mint leaves (unless you used a spice bag)
~Pour milk mixture into two mugs and top with fresh brewed coffee
~Sit down with your favorite book or a moment of calm and have some me time.
The mint flavor is freshy fresh and the chocolate is dark and dreamy when paired with the coffee. Ordering coffee out is a treat but this is a gift you can quickly make for yourself.
