2/2 Hunting My Inspiration
Last night I had the funniest experience that lead to a really great vegan snack that I would like to share. I mistakenly tried to hunt down my inspiration when it was right there in the fridge all along.
It was my day off at Trader Joe’s and I had optimistically over-scheduled myself to the point of insanity. My evening had included a trip to the pool, a pie crust from scratch, several hours of computer work and an inspired post to share with all of you. I was running through the house trying to put my bathing suit on to make it to water aerobics while making a snack, and struggling to formulate a plan with Sandy on how to get to the grocery store before we got to the pool to figure out what to create and write about for the blog…so on and so forth.
As I am doing all of this crazy making, I am also dumping a container of vanilla yogurt into a bowl. I throw some walnuts into the spice grinder (still yelling through the house to Sandy who is also trying to get ready for water aerobics). I mindlessly dump the powdery walnuts onto the vanilla yogurt, stir some in and dump some more on top, douse with a dash of maple syrup and take a big bite as I am putting on my Crocs and collecting my duffle bag when I am stopped dead in my tracks…”Oh my god why does this taste so good?” I bring the dish to Sandy, let her taste it and revel in her response…”Oh my god what is that and why does it taste so good?”
I become giddy with excitement and relief when I realize that this is exactly what I want to write about and share with all of you. The, I am really in a hurry, taste bud exhilerating, throw together in a second, really good for you vegan food. Our lives aren’t always conducive to creating awe inspiring, thought out compassionate food. Sometimes we need a what the heck can I eat right now and still save the world when no one is looking food. We can all use a little inspiration with the everyday foods we eat in a hurry, in our car and standing over the sink.
So, vanilla soy yogurt with crushed powdery walnuts and maple syrup is a sublime snack on the go.

Divine! Trader Joe’s sells an agave/maple syrup blend… delicious!

This does sound yummy! I love yogurt, and I wish I could force myself to eat it in the winter. I have such a hard time with cold foods in cold weather.

We love it and it is amazing on pancakes or oatmeal…yum.

I know. Me too Erin. It was nothing short of a miracle that I grabbed the yogurt at all, so it was such a pleasant surprise to have created something so satisfying on the fly.
