3/1 Power Lunch
Today is the first day of our 28 day whole food, no oil eating plan. Today is also the day that we are attending an all day seminar called The Local Food Summit. There will be speakers, breakout sessions and limited access to vegan, no oil, sugar and sodium free foods unless we carry them in ourselves. It isn’t my style to go hungry so in honor of such a fun filled Tuesday I made my first tofu sandwich spread that turned into a Power Lunch wrap. I have fallen in love with it and I think you may as well. It was easy to prepare and can really be turned into any flavor profile. I chose what I did based on what I had in the fridge. You could really go wild with this one and I hope you do.
Power Lunch Sandwich Spread

Inspired by The Engine 2 Diet
Ingredients
7 oz extra firm tofu drained and patted dry
1 Tsp white vinegar
juice of one lemon
1 rib of celery chopped
1/2 Tsp liquid aminos
Salt free multi spice blend to taste ( I used Bragg 24 herb & Spice Sprinkle)
Cracked black pepper to taste
Turmeric to taste ( I really used this to add color so add as much as you would like)
1/4 c chopped carrot
2 additional ribs of celery chopped
Make It Happen
~Put all ingredients except for the carrots and additional 2 ribs of celery into food processor.
~Pulse until thoroughly combined
~Transfer to a bowl and mix in chopped carrots and celery
~Chill and serve on or in your fave whole grain carb vehicle
~ We added pea shoots and a bright yellow tomato slice
The shoots added a beautiful texture (and health benefits) to the sandwich while the tomato added a mild sweetness and a dash of acidity. I think you could enjoy this spread with anything like crackers, sprouted bread or in a kale wrapper. You can adorn it with any veggies and it will be delicious. I think this recipe is worth experimenting with. Please share your successes.
