4/22 Happy Earth Day & A Plant Strong Winner
Happy Earth Day friends. Honor our Earth by enjoying a plant based meal today. Here are a few links to my fave dinner ideas.
As you know Sandy and I started the Engine 2 Diet (vegan, no oil, low sodium and low sugar) in February and never looked back. It has transformed the way I look at food and feel inside my body. Moving to all whole foods and eliminating processed foods created a shift in my body and mind that I had not expected and I now love the way I feel. I have never felt this connected to my body, how it works and what it needs. I have never really listened, but plowed ahead feeding it what I wanted it to have. That mentality has only left me feeling overweight, unhealthy and often disconnected from myself, even though I was vegetarian. I have always been at odds with my body and my relationship to food until now. That is a direct result of becoming vegan and beginning the Engine 2 and I am grateful. Yesterday when I got home from work a present had arrived via UPS. It was an Exploits birthday gift and it came on the very date I started the blog. So serendipitous. In the package there was a signed copy of the Engine 2 book from the Author Rip Esselstyn, who we now love and admire. He also signed one for you…..the lucky Exploits Birthday Bash Friday Winner.
Congratulations Nik, you have won a signed copy of the Engine 2 Diet, a book that has changed my world and has made me plant strong. It will do the same for you. It is really a fun read with information that will change your life, your health and you r relationship to food. The recipes have become staples in our everyday meals.

Sweet Bananas!! I literally squealed with joy when I read your post! Thank you for the wonderful Engine 2 book! Your discussions and recipes from his book have kept me entranced for so long…I am so looking forward to reading it.
My father had quadruple bypass surgery 2 years ago and since then I’ve been trying to sway him to the vegan side. He is an old-school Italian cook, so he’s been very skeptical of anything non-carnivorous, but I honestly think that Rip’s book, backed up by Dr. Esselstyn’s research, will influence him in a positive way. I can’t wail to share it with him…Thank You!!
