On April 21st Exploits of A Vegan Wannabe will turn one year old. Beginning Monday April 19th I will give away a birthday present every day until Saturday April 24th. The goods I am currently compiling are so exciting that I can hardly keep them a secret, but fantastic things are always worth the wait.

Vegan Key Lime Pie.
Key Lime Pie holds many special sense memories for me. It tastes sassy like being in a convertible on A1A heading toward Key West. It feels sun drenched and thrilling like sailing a catamaran and soft and sweet like a sunset cruise with champagne and hand holding. It is a wedding reception I will never forget and the most loving birthday gift I have ever received. Key Lime Pie is special to me so I needed the perfect vegan recipe. Here it is, with thanks to friends for sharing it.
Bee Friedlander from the Animals and Society Institute passed along this recipe to our friend Jill Fritz from the Humane Society of The United States who shared it with us. What I love about this is the handing down of compassionate recipes between animal advocates. It is like a recipe that is handed down through generations of your family…we are a chosen family bound by the desire to make a difference in the lives of all creatures.
This pie is extraordinary. After the first bite you will not believe that it isn’t packed with a hen house full of eggs or sweetened condensed milk. The texture is silken, the limey flavor is elevated by the orange and the store bought crust is perfect just the way it is. You will be astonished by how easy this is to create. However I must warn you, the leftover pie you have not yet consumed will haunt you from the refrigerator like a deep regret or a missed opportunity. I spent an entire 8 hour shift at Trader Joe’s dreaming about the moment I could have another piece. It is that good.
Vegan Key Lime Pie

Thank you ladies for the most perfect recipe
Ingredients:
- 2 8-ounce containers Tofutti Better than Cream Cheese (non-dairy cream cheese) Stick with this brand.
- 3/4 cup sugar
- 1/2 tsp vanilla
- 1/2 tsp orange extract
- 1/4 cup key lime juice (I used Nellie and Joe’s Key West Lime Juice)
- 2 tbsp cornstarch
- 1 pre-made graham cracker pie crust (I used Arrowhead Mills)
- 2 tbsp juice of an orange (you could also use ruby red grapefruit or mandarin orange juice)
- orange zest
- Fruit for garnish
Make It Happen
Pre-heat the oven to 350 degrees.
In a blender or food processor, combine all the ingredients and process until smooth and creamy. Pour into pie crust.
Bake for 40 to 45 minutes, or until the liquid in the middle of the pie is set. Allow to cool. Chill for at least 4 hours before serving to allow pie to set. Begin to monitor your pie at 30 minutes and watch it like a hawk between 30 and 43 so it does not over cook. I made sure the middle was no longer jiggly then took it out and it was perfect.

OMG!!!!!!!!!!!!!!!!!!!!!!!! This is almost too good. I will be making this again. I am going to be armed when I show up for family gatherings. They wont even know this is Vegan. I will tell them after/ SO YUMMY I think you shoudl add a disclaimer though ” you might wind up eating whole pie in one sitting”

Wow! This Key Lime Pie looks amazing! Much better than the one I make from PETA’s recipes. Yours is creamy and thick, the one I make is runny and thin, not creamy at all.

I had no idea you were in Florida. I love Florida. My favorite area is St. Pete Beach. I am not sure how vegany it is but the area is gorgeous and the people are amazingly friendly.

Please let me know how it turns out. I overcooked one the other day and even though it wasnt as attractive as a properly cooked pie, we devoured it and it was just as delicious. I love a pie with a built in plan B.

I know, it should be against the law. I am so glad you loved it too. I completely agree…this is the pie to bring to show everyone you know how amazing vegan desserts are. Mind boggling pie minus the unsavory ingredients. Perfect.
