6/25 Pizza Scape

I couldn’t help myself, when I saw more garlic scapes at the farmers market I snatched them up like a mugger. The farmer warned me with an audible sadness that these were the last of the season…enjoy them. We did just that. If you can find them in your farmers market, give this pizza recipe a try. It was magnificent  in its simplicity.  I will crave it until I once again see the elusive scapes in the market.

Garlic Scape Pizza

Ingredients for 2

8 garlic scapes trimmed at both ends

1 or 2 naked pizzas of your choice. We used 2 square pizza pitas.

1 C vegan mozzarella

1/2 C chopped olives of your choice. We used kalamata and colossal green olives.

1/2 tsp dried oregano

Wilted arugula (goes on after baking pizza)

2 C arugula

3 dashes of garlic powder

1 Tbsp balsamic vinegar

Make It Happen

~Sprinkle the oregano on the plain crust(s).  Layer all of your pizza toppings on top how you would like it and bake until cheese is melty and slightly browned on the edges.

~When the pizza is ready to come out of the oven put arugula in a lightly sprayed skillet on medium heat. Dash on powdered garlic and douse with 1 Tbsp balsamic vinegar. barely wilt, take off heat and heap on top of each pizza. If you have a remaining drizzle of balsamic in the pan, pour it over your pizzas.

~Cut, have a biggie bite and seriously consider opening your own artisan style pizzeria. Bravo! my friend.

Kale Trail Update

Yesterday we had our long run. We decided to go someplace new to really enjoy the run and the afternoon. We drove to a beautiful Metropark to run the trails. It had been raining off and on for two days and the sky was ominous. We both agreed that if it began to rain and we were on the trails, we wouldn’t even get wet. Walking up to the trail-head I couldn’t help but feel pride and excitement. I was thinking, “I have never done anything like this and its pretty great. I am about to do a trail run for 4.5 miles. Awesome.” The trails were dark and thick with moisture. As we ran, all I could hear were the sounds of my own breath and the gravel under my shoes. It felt magical like a moment of connectivity until………. Mosquitoes.  Evidently they are attracted by the carbon dioxide we exhale as we are breath. This meant that the more we ran, the harder we were breathing, the more mosquitoes that were attacking us, attaching themselves to our bodies and biting our calves, necks, forehead. We were running so fast that it was like a scene from Blair Witch Project. There was no way out but to run out. We ran past an amazing deer and couldn’t even slow down to look at it because we feared for our lives. I am sitting here now trying not to scratch my skin right off my bones. We still rocked the 4.5 miles though.
