7/11 Dark Chocolate Orange Fudgsicles

Happy Meatless Monday. Here is a piece of edible nostalgia, made with a compassionate twist.

Yesterday we had 45 minutes of cross training to accomplish. In order to make it more palatable, I conjured up the greatest plan. What if we packed the Veggie Van (our ancient, hippie conversion van) with our bikes, a picnic and our bathing suits and went to the Metropark with a pool?!  That way, as soon as we finished our ride, we could have a biggie vegan picnic then bask in the sun with a great book and a pool to cool off in. That is how to make working out in the heat of the day sound way more fun. Sometimes I just need to cloak it, like the spoonful of sugar making the medicine go down concept.

So, that is precisely what we did. We rocked our ride, had a mongo vegan picnic then headed to the pool to rest and swim away the rest of the day.

As we drove home with all the windows in the Veggie Van down and the warm air blowing in, I felt that perfectly lazy and sun soaked feeling that comes with a well played summer day. I thought to myself,  “The only thing that could make this day any more spectacular would be a fudgisicle.”

Dark Chocolate Orange Fudgsicles

Original recipe from Mandy on VegWeb and modified by:  S. Duquet

Ingredients

1 (12 ounce) package silken tofu

1/4 C cocoa powder

3 T Brown rice syrup

1 T coconut oil

1 tsp. vanilla

1 tsp. orange extract

1/8 tsp. salt

1/16 tsp. cayenne pepper

1/16 tsp. cinnamon

Make it Happen:

~Whip all ingredients together in blender or food processor.

~Pour into popsicle molds, freeze and devour.

These are exactly like the ones I remember  as a child with a dash more sophistication in flavor. The chocolate is rich with a hint of orange and a lingering heat.  They were a snap to prepare and the perfect dessert to add to your Meatless Monday, Tuesday…..Wednesday. Compassionate, chilly and incredibly chocolaty. Yum.

    I have those same popsicle molds and have been waiting for something to fill them with. It was either making soap popsicles or real ones hmmm I think I will make the real ones.
