7/25 Happy Meatless Monday-First Harvest
The Meatless Monday movement is all about taking a day to enjoy meatless, energetic foods that are vibrant and packed with nutrients. One of the easiest and most economical ways to do that is by planting a small garden. Whether you focus on herbs or have a veggie stand worth, growing and harvesting your own edibles is a great way to treat yourself and your family to a meatless meal. Didn’t have time to plant this year…make a mental note of the varieties you really enjoy from your farmers market and plant them next year.
Yesterday I had the honor and delight to pick the first veggie from our organic garden, an Ichiban Japanese Eggplant. They are the long and thin , deep purple eggplant. They are sweet and creamy and literally melt in your mouth when grilled. Whenever we have these for dinner I gobble them up first then look at Sandy’s plate with my extra strength pouty face. Sometimes this works. I love them so much that we decided to grow them. It is stunning to see the little purple eggplant growing from the plant like bananas. They just hang there as their exquisite deep purple beauty soaks up the sun. Tasting the first one last night was like having the sun as an amuse-bouche. Unforgettable.
