8/10 Deep Freeze
If I could capture Summer in a bottle I would crawl inside of it and live there forever. The smells, the heat, the tastes…they are here and then gone in the blink of an eye. I have begun gathering (hoarding) Summer fruit at its peak and chopping and freezing it for a later date. I shared this with you last year in the Frozen In Time post but wanted to put it out there again. Buy it now when its cheap and outstanding in flavor. Cut it up and freeze it in one cup bags for a snack, smoothie, dessert compote, any dish that could benefit from some perfectly ripe, locally sourced summer fruit.
Over the winter as I sulked around the dark house and wandered into the dark kitchen seeking edible comfort, I found bags of frozen honey dew and cantaloupe. It was like seeing a mirage in the kitchen but this was real and very tasty. The small amount of work up front will really be worth it when the fruit is not as plentiful and flavorful. If you have a fruit preservation tip, please share.
Kale Trail Update
107 days until race day. We ran 6.5 miles for the very first time and have officially reached the half way mark. We are now running a minimum of 16+ miles a week. We have tried our long runs while consuming two different snacks. Lara bars which were like trying to gnaw through part of the Redwood Forest while running, and we tried one of the gels which was only slightly more palatable then swallowing hot salty pudding. Needless to say, still searching for the right snack. I am loving this. I am a runner, a vegan runner. A little over a year ago I was a non athlete, vegetarian smoker. Small steps=great change.

Have you read Brendan Brazier’s book “The Thrive Diet?” He gives suggestions for what to eat/drink before, during, and after workouts based on the type and duration of your workout. It might be helpful. Personally, I cannot eat a thing during a run so I have no suggestions. Good luck!
