9/9 Rainy Day Stew

Perhaps like many of you, when I woke up yesterday morning it was raining. Every morning for the past several mornings have begun in that way. Rain can be many beautiful things to me. It can be soothing and calming, nourishing and hydrating and even a welcome reprieve from the heat of Summer. One thing rain will never be to me as it is gently rapping on my bedroom window is motivating. It took every single ounce of vegan fueled energy I had to drag myself away from Chloe and the fleece blankets.  I spent the rest of the day trying to slay my mounting desire to crawl back in to the blankie cave with Chloe.

The chill in the air and the rain gently rap, rap rapping at my window made me crave a dinner that was warming and soul satisfying. My looming five mile run and evening spent working made me also crave something easy to make. Rainy Day Stew is all of those things. It is also a rainy day meal because it features inexpensive ingredients so you can save your pennies for the next rainy day when you want to order in Thai food and watch movies.

Rainy Day Stew

Ingredients

2 C raw potatoes chopped in 1 inch cubes

2 C water

1 box of low sodium veg broth 32 ounce

1 shallot finely chopped

1 C uncooked barley

1 15.5 oz can of Great Northen beans drained and rinsed

1 15.5  oz White Cannellini beans

2 C corn (I cut raw corn from the cob because it is so prevelant and tasty right now. Frozen is fine too.)

2 C celery rough chopped

1/2 tsp Turmeric

1/2 tsp white pepper

2 Tsp garlic powder

2 tsp liquid aminos

Make it Happen

~Put all ingredients into a stock pot

~Bring to a boil

~Reduce heat and simmer covered for 45 minutes, stirring occassionally until the potatoes are fork tender

~Feel free to add a smidge more water while it is simmering if you need to keep the barley from sticking to the bottom of the pot.

Curl up with a steaming bowl of Rainy Day Stew, some crusty bread and feel the experiences of the day floating away in the steam of your bowl.
