11/12 Warming Up My Insides & The Seven Gifts of Gratitude
Yesterday we ran our very last long run before the race. We waited for the warmest part of the day which didn’t ever come or exist. It was 30ish under a dark and gray sky. It was difficult to leave the warmth of the Veggie Van but we are at the very end of our training…not a time to wuss out. The cold air angrily seared my nostrils as I worked to breath it in for eight miles. The odd thing is that even though it was so cold, I was still sweaty, then freezing and wet. Like a melting and refreezing overdressed snowman in running tights. It was brutal.
After I took a scalding shower and mummified myself in fleece, I settled in with Chloe and a steaming cup of Mint Hot Chocolate. Yes, please. So Delicious has created two limited edition holiday coconut milk flavors, mint chocolate and egg nog. I heated the mint chocolate for a soothing, hand warmer I could sip out of. It is soft and minty and rich in flavor. It was decadent cold and soul satisfyingly hot. This would be a welcome dairy replacement in your holiday recipes. Mint chocolate cookies, brownies…bread pudding. It would also make a sexy dessert just on its own. Thank you So Delicious for making compassionate cocoa so easy.
We are leaving this coming week for our half marathon in Florida. We will be gone a total of 10 days Yay! While we are there I will be seeking out the most thrilling and delicious vegany things I can find and promise to share them with you. Because we will be gone for Thanksgiving, I would like to say thank you now.

I am deeply grateful for so many things, from hot showers to sun-filled mornings to my favorite shoes, and especially for people like you and Sandy who share so much and form connections and communities where once there were none.
… and if it’s any consolation the current temp in St. Pete is 66 and clear…forecast right around 80 for the coming week.
Don’t forget to bring sunscreen.

This post made me shiver which induced a hot cocoa craving that only vegan marshmallows could satiate…or maybe this So Delicious. I’ll have to try it!
