11/16 Ambercup Buckwheat Breakfast
As promised, here is the second Ambercup Squash recipe from the squash baking experiment. I decided to make a hot breakfast cereal using buckwheat and squash. I thought they would be wonderful together and buckwheat is nutritionally amazing.
Here are some buckwheat facts from homestead-acres.com to blow your mind:
~Buckwheat although often considered a cereal grain is not a member of the grain family. It is a herb related to rhubarb. The plants flowers turn into seeds, buckwheat groats.
~Buckwheat contains no gluten and is considered safe for people with allergies to wheat, barley and rye.
~Buckwheat has more then 80% of the protein found in eggs and 90% of milk.
~Buckwheat is a source of quartering and rutin, which are antioxidants.
~It is high in all of the eight amino acids needed for good health. These are tryptophan, lysine, isoleucine, leucine, methinoine, threonie valine, and phenylalanine. Buckwheat is also a good source of phosphorus, fiber, vitamin B5 and magnesium.
I really had no idea that buckwheat was so nutritionally phenomenal. I thought it was a delicious grain. Funny to learn that it isn’t a grain at all and it is so much more powerful than I realized. I enjoyed experimenting with it.
Ambercup Buckwheat Breakfast

Ingredients
1 C uncooked buckwheat
2 C non dairy milk of your choice ( I used unsweetened coconut milk)
1 C cooked Ambercup (or fave winter squash of your choice)
1 Tbsp Maple syrup
1 Tbsp Vanilla
1/3 C rough chopped raw walnuts
Set aside an additional dash of maple syrup and non dairy milk for finishing touches
Make It Happen
~Put buckwheat, milk , squash 1 Tbsp maple syrup and vanilla into a medium saucepan and cook on medium low heat until liquid is absorbed and buckwheat is your desired texture
~Top with rough chopped walnuts, a dash of maple syrup and a splash of non dairy milk

Kale Trail Update
As you are reading this I am (drinking gin out of a tiny glass bottle) on a plane headed for Florida for the race which is on Sunday. We have one more run between now and then and it is a two miler. It is ironic that our last run before the race is two miles because six months ago, before we began to train, that was our run. We would do a two miler or less a couple of times a week. Now it is our taper length. Pretty cool. I never thought this day would come, yet I cant believe it came so fast. I am trying not to be nervous. I am trying to be brave. I am trying to remember that I have done 13 miles three times now. I can run the distance. I have done the work and now it is time to be present. Time to enjoy the day and the journey that is still unfolding. Thank you for your continued support and encouragement. You have helped me every step of the way and I am so very grateful.

ohgoodgolly I actually spent yesterday reading about buckwheaty goodness and looking up what to do with it! I’ve never tried it but now I’m all stoked for it…thanks for the recipe!

This is the perfect breakfast and snack. I just love it and it feels scandalous to have squash for breakfast.
