11/3 2 Edgy Veggies To Go Update & a Cool Video
A month ago or so I shared with you that Sandy and I had launched 2 Edgy Veggies Meatless Monday Meals to go. The idea was to create a gourmet vegan meal-for-one that the client could pick up on Monday morning. They would have a hand crafted meal that had been prepared for them with love, and would simultaneously be helping the environment and the animals of the world. Bonus. It would pair people that loved to cook (us) with people that loved to eat. It would be spreading veganism by osmosis, passive activism.
Because we have never done anything like this,(we jumped in head first) we wanted to start out slowly, with only two clients on Mondays. Before the week was over, we had five clients. By the second week we had clients on Monday, Wednesday and Friday. We are having a ball creating menus and crafting exciting vegan meals for people. They are changing their lives one meal at a time and I am grateful to be a part of that. It is hard to imagine that a year and a half ago I didn’t even cook. My how things can change.
I came across this video from The Humane Society of The United States (HSUS) about the importance of Meatless Mondays and how to jump in and participate. If you are veg curious, you may find it informative and helpful. If you are already veg, it will make you swell with pride and you will want to share it. This is the most effective, thoughtful and relatable vegetarian video short I have seen in a long time. It is definitely worth the watch.

We are having SO much fun making vegan meals for our clients. When I think about how many vegan meals have been consumed in the past month by previously non vegans…it makes me so happy. People want food that tastes good and that also fills their soul. They are recognizing that has nothing to do with animal products. I am really enjoying creating our Meatless Meals to go.
