1/17 Chocolate Pudding in Fancy Dress
I needed to make a dessert for our Meatless Meals To-Go clients in a quick way. I wanted it to be exciting and light, with very little or no sugar. This is what I came up with. It is the easiest and most alluring chocolate pudding I have ever had. This is the perfect dessert to whip up for company or for an evening-in with an addictive novel. It is edible immediately but becomes even better overnight.
Chocolate Pudding in Fancy Dress

Ingredients
2 one pound packages of silken tofu. Drained.
2 Tsp vanilla
1 Tsp orange extract
5 Tbsp cocoa powder
1 10 oz jar seedless raspberry all fruit spread ( I used Polaner)
Make It Happen
~Put all ingredients in food processor or blender and blend until very smooth.
~Put in small decorative bowls, martini glasses or ramekins. Cover and chill then enjoy.
Because this pudding is non dairy and does not require being cooked, it never develops a yucky skin on top. Likewise, it thickens in the fridge to an exquisite consistency without added thickeners. The orange extract eliminates all traces of tofu taste leaving a bright and citrusy dark chocolate dish. We loved this pudding and I hope you do too.

I think people would appreciate options for dinner-only or breakfast-only in addition to the 3 -meals-a-day/1 week too.
