3/5 Roasted Golden Tomato and Red Pepper Soup
Happy Meatless Monday. To start off the week with a culinary slam dunk I have a super easy dish to share. While at work the other day we were sampling a roasted red pepper soup and adding cooked lentils to it. I thought it looked scrumptious but was disappointed to learn that for some silly reason, the soup had dairy products in it. This seemed unnecessary from my shoes, but inspired me to replicate it with a vegan flair.
So, I toured the produce aisles in search of freshy ingredients to re-imagine this soup and make it from scratch. I spied some golden cherry tomatoes and a bounty of red bell peppers that were brilliant and cheap. Perfect start to a new recipe.
Roasted Golden Tomato and Red Pepper Soup with Lentils

Ingredients
6 1/2 C golden cherry tomatoes
3 red bell peppers, sliced
1 small shallot, sliced
several grinds of fresh cracked pepper
3 dashes of cayenne pepper (or more if you would like)
2 tsp + 1 Tbsp garlic powder
1 Tbsp white miso paste
3 C low sodium veggie broth
1 C water
2 1/2 C cooked lentils (I used brown)
Make it Happen
Lightly coat large cookie sheet with spray oil. Spread tomatoes, red pepper and shallot on the sheet and over top, grind black pepper, 2 dashes of cayenne and 2 tsp of garlic powder and roast in oven at 350 degrees for about 40 minutes until the vegetables are thoroughly softened and puckery. Let cool. Put roasted ingredients and veggie broth in food processor or blender and puree.
Pour mixture into a large stockpot and start to simmer on medium low. Add miso, 1 Tbsp of garlic powder, another dash of cayenne, water and lentils and cook until heated through, about 15 minutes stirring occasionally.
Serve with hearty grain crackers or fresh bread.
This soup made me feel like Summer was an actual possibility. It tasted like a sultry and fragrant evening in July. The kind where you can sit on the front porch with a glass of white wine watching the fire flies come alive. The kind of evening that ends with the sound of crickets.
Summer is on its way and I will be ready with open arms.
