4/11 Pineapple Cilantro Salad
Yesterday I bought the most scrumptious pineapple at the grocery store. It was bright and ripe and juicy. When picking a pineapple, look for one that is more yellow then green and gently tug on one of the center leaves at the crown. If it comes right out, your pineapple is ready to enjoy.
The pineapple I purchased was so unbelievably sweet that I decided to add a smidge of sour and a dash of savory to create a beautiful salad. This dish tastes like Summer to me.
Pineapple Cilantro Salad

Ingredients
1 pineapple cut into bitesize pieces
2 tsp Key lime juice I used Nellie & Joe’s (fresh lime juice will also work)
1 tsp Rice Wine vinegar (or a bit more if you would like)
3/4 C finely chopped fresh Cilantro
Make It Happen
~Toss all ingredients together to coat then enjoy.
I love a dish that is this tasty without any work. This will be a great salad for summer evenings, busy weekends and outdoor parties.
If you have any left over, throw it in your juicer or blender for an action packed breakfast cocktail.
