4/23 Coconut Shortbread w/Dark Chocolate
Happy Meatless Monday. Today I have a recipe for the type of baked good that will rejuvenate or give rise to your joy of baking. I believe this because praise worthy success requires so little with this one. The enjoyment to aggravation scale is tipped in this recipe’s favor and I think that is the kind of recipe I like to keep in my hip pocket.
Last week I tasted a vegan shortbread that had been created with coconut oil. The woman that made it replaced the usual butter with coconut oil for the most luscious cookie I have ever tasted. The shortbread was crumbly and dense in an authentic way while still being unbelievably light. It was slightly sweet and coconut scented for the most divine experience. The bonus layer of dark chocolate was a creamy, peppery sultry addition that made it unforgettable.
Coconut Scented Shortbread w/Dark Chocolate

Ingredients
2 1/4 C unbleached all purpose flour
1/2 C sugar
1 C softened (but not liquid) coconut oil
1 1/2 C vegan chocolate chips
Make It Happen
~Preheat oven to 350 degrees
~Mix flour, sugar and coconut oil with a pastry blender or two knives until it resembles crumbly dough and all coconut oil chunks are gone
~Push into greased 9 x 9 square pan. I do not have a pan in that size so I used a 7 x 11 glass pan and it worked great.
~Poke holes in the dough with a fork then bake approx 20 minutes. Shortbread browns only slightly. Remove from oven and set on a cooling rack.
~Pour chocolate chips over hot shortbread and let sit for a few minutes until they look melty. With the back of a spoon, spread the now melted chips over the shortbread. Allow to cool thoroughly before cutting.
~Cut shortbread into desired shapes (triangles, fingers, squares) and enjoy.
I have never tasted shortbread so divine. The coconut oil adds a remarkable texture and flavor to this typically humble and understated cookie. If you like shortbread, you are going to freak over this one. A few simple steps for a vegan dessert that will blow everyone away.

They are so easy you will almost feel guilty for the amount of pleasure you will derive from them. However, do not fall into that trap. Instead…go to the mirror and thank yourself for being such an excellent baker as you are wiping shortbread crumbs off your mouth.
