12/21 Vegan Snowbirds
Happy Winter Solstice. To me the Solstice represents the death of the old creating space and light for the birth of the new. The sloughing away of negative ideas, experiences and fears.
I am writing to you from the passenger seat of the KIA. We are driving South in a blinding snow storm. We have been given a rare opportunity to spend the next three months in Florida, one of my favorite places in the world. I feel at home there. I am connected to the salty air and ocean in a way feels like a natural extension of myself. As you know…Michigan winter and I don’t really see eye to eye. As the days grow colder and the skies turn to gray, I can feel my light being extinguished. I have often thought…what if I just followed the sun so my exuberance didn’t have to hibernate? I love to be warm. I love blazing sunshine, wild dolphins and palm trees. My entire adult life I have wanted to bury my feet in warm, white sand for Christmas. The idea of wearing shorts and flip flops on Christmas makes my heart beam with joy. As someone that has only ever lived in Michigan, Boston and Maine, I have had my fill of snowflakes.
We have been given the opportunity to fulfill a dream, take a chance…..live like we really mean it. For the next three months I will explore the vegan eateries of the South, spend time with beloved sea turtles and reconnect with my jewelry designer self. I will allow my fear to fall away as I open my heart to the brand new experiences of a vegan explorer and Snowbird. I will write and share these experiences with you. Thank you for always being a gracious and willing travel companion. I am thrilled that you love to travel as much as I do.
As we continue our drive South, car packed with vegan jerky, flip flops and our sleepy chihuahua, I cant help but wonder how long it will take to meet back up with the sun? I have missed her so.

Are there any substitutions for oil in a recipe?
Tried the “Turkey-less” turkey roll. It was OK, but we like the meatless meat balls better.

Hi Nan,
I will miss seeing you too, but look forward to seeing you in April. In the meantime we can talk all things vegan online. I use applesauce, fruit butters and banana as a sub for oil. It depends on the recipe and the other substitutions I have made in that recipe. I am glad you tried the vegan roast. I also love the meatballs. I like them with Chinese 5 spice or Soyaki as an appetizer. They also make a fantastic meatball sub with garlic marinara sauce and vegan mozzarella on a hoagie roll. Yum!
