3/27 Back to Basics-Kale Chips
Kale chips have exploded in popularity and can now be found almost anywhere. They are the new potato chip, the snack food of farmers markets and foodies everywhere. Kale chips are a bit expensive to purchase but deliciously inexpensive to make. I used to think that exceptional chips could only be produced in a kicked up food dehydrator because dehydrators do make the most wonderful chips.
However, our blazing hot ovens can also create divine kale chips. We simply need to do it a bit slowly on lower temperatures. Here is my new favorite kale chip recipe. It creates cheesy, crispy chips without sodium and with very little oil. For nacho cheese kale chips, add a few dashes of chipotle powder or cayenne. Now that is delicious.

Ingredients
4 cups kale torn into potato chip size pieces (rinse/submerge in water/dry kale thoroughly first and remove the “spine.” I spin mine in our salad spinner)
1 tsp olive /hemp/flax or oil of your choice
1/3 c Nutritional Yeast flakes or powder
Optional: 1/4 tsp of cayenne or chipotle powder, more or less to taste
Make it Happen
~Preheat oven to 325 degrees
~In a bowl large enough to mix your kale, drizzle kale with 1/2 the oil and nutritional yeast and toss to coat. Add remaining oil and nutritional yeast (plus optional cayenne or chipotle powder) and toss one more time.
~Put seasoned kale pieces in a single layer on a baking sheet and bake for 7 minutes. Stir kale around on the baking sheet, moving the pieces away from the sides because those will cook first.
~Bake for 6 minutes more or until lightly browned and thoroughly crispy.
Put in a bowl and enjoy with friends. (Read…. eat right from the scalding hot pan, standing up. Don’t share. Not even one. You have just consumed four cups of kale.) Cross buy healthy junk food off your to do list.

Thank you Julie. The Nutritional Yeast gives them a nacho cheesy, salty flavor without cheese or salt. In addition, Nutritional Yeast is a tasty source of B12, amino acids, protein and minerals like iron and magnesium. I shake it on anything that isn’t nailed down.
