4/15 Carrot & Flax Seed Crackers

Happy Meatless Monday.

Today I am going to to share a two for one, because the first recipe leads to the creation of the second.

Many of you have shared with me that you love juicing as much as I do.  When I am not creating my own concoctions with my Omega VRT350, I am purchasing carrot and green juices from the grocery store. They are a nice stand-in when homemade isn’t an option. Veg juices are one of  my favorite snacks, especially when I am on the run.

A  few days ago I made up a new juice that I think you are going to love. Don’t have your own juicer but think you may love juicing?  Garage and rummage sale  season is upon us. You can always find juicers at garage sales.  They may not be the most kicked up masticating version but why not pick one up to see if you even enjoy it?

I realize that high end juicers can be an investment, but you are worth it and your health is worth it. I wouldn’t question the cost of my health care to fix an illness or ailment so when we I am able, I would prefer to invest in wellness.  Having a juicer has felt that way for me and in the short amount of time that I have had mine, it has paid for itself two times over in consumable joy.

So every time I juice vegetables I think to myself…that crazy pulp would make the most delicious crackers.  This is the first time I actually tried to make them. Don’t have a juicer but would like to try your hand at baking crackers?  I assure you that if you call a friend of yours that digs juicing he/she will be more than happy to share their pulp with you. I baked these in the oven and they were so good that  Sandy and I ate all of them, all four dozen…..in the same day.

Carrot Ginger Orange Juice

makes 16 oz

Ingredients

1 yellow pepper chopped and seeded

1 inch of fresh ginger peeled

4 oranges peeled

2 pounds organic carrots (mine did not have green tops)

Make it Happen

~Put everything in your juicer one by one until juiced.  Then enjoy.

Ingredients

6 C pulp from above juice

1/4 C ground flax seeds

1/4 C whole flax seeds

3 tsp lemon pepper

1 tsp oil of your choice (I used hemp oil)

1 1/2-2 C water (This will depend on how dry your pulp is. You want to create a dough that will stick together, but is not too wet)

1/2 tsp sea salt to sprinkle on top before baking

Make it Happen

~Preheat oven to 250 degrees

~Mix all ingredients together in a bowl, adding water a little at a time until you reach the consistency of a dough

~Line two cookie sheets with parchment paperCarrot crackers 005

~Halve dough and put one half on each of your cookie sheets

~Using the back side of a fork, gently spread out the dough by continuously patting it down and outward. Work toward the shape of a rectangle that is evenly distributed all the way across and throughout, until about 1/4 inch thickness

~Sprinkle with sea salt or your favorite spice

~Gently score crackers in desired shapes and sizes with a pizza cutter or with a knife. For a more rustic look,  leave them whole and break them apart when you flip them over during baking

~Bake for 2 hours and 15 minutes then remove from oven to see how they are doing. If they are dry enough to peel off the parchment then it is time to flip them over.  As I flip them, I use scissors to cut where  they were scored.

~Bake for an additional 40-45 minutes or until lightly browned and crispy.

Carrot crackers 006It may seem like they take forever to bake, but I had mine baking away while I was busy doing other things. They don’t need to be checked on until the very end when they are nearly done. As I worked on the computer, did laundry and made lunch, four dozen carrot & flax seed crackers made out of juicing scraps were baking in my oven.

It is like recycling for your belly and that is good stuff. They are gluten, nut, dairy and hassle free. They are low cost, low sodium and high flavor and fiber. We devoured them as if they were trying to escape but if you have any left, they will keep for a few days in an air tight container.
