4/22 Kickoff of U.S. VegWeek 2013
Happy Meatless Monday, Happy Earth Day and Happy first day of US VegWeek 2013. Launched in 2009 by Compassion Over Killing, VegWeek is a culmination of all things veg. It is an all encompassing resource for veg curious and vegan wannabes like us.
You can go to In Your Area to see if there are VegWeek activities going on in your town. Tonight we are attending the kickoff party for our first ever Michigan VegWeek in Ann Arbor.
Tonight’s event features John Salley, outspoken vegan and Detroit Pistons basketball great. I met him yesterday at VegFest and his sincerity and star power blew my vegan shoes right off. I am looking forward to celebrating U.S. VegWeek Michigan style and spending time with others that think that kale is a daily necessity.
Intrigued?? The U.S. VegWeek site also offers a 7 day VegPledge where you can pledge to go vegetarian for a week. As they put it, “With 52 weeks in a year, why not make one meat-free?” I completely agree. It is one week, seven days to try something new, excite your senses and wake up your palate. Throughout the week you will receive recipes, tips and tricks to help you enjoy a week of compassionate cuisine. Empowering, life transforming information that is delivered to you for free. Sounds good.
Can’t quite commit to a week? How about today? Celebrate Meatless Monday by having a meatless dinner this evening with your family, yourself or your friends. What a great way to honor Earth Day.
Here are a few of my favorite, easy to create meatless meals to whet your appetite.
Parsley Cashew Pesto to top your favorite pasta
Sausage & Red Pepper Quiche for the beloved breakfast for dinner experience
Meyer Lemon Zucchini Pizza on a store bought pizza crust
Louisiana Style Red Beans & Rice easy, tasty and inexpensive
Enjoy and have a delicious day.
