Happy Meatless Memorial Day friends.
Ever since I was a little girl I have always considered Memorial Day the official kick-off to Summer. On this day the grills burn hotter, the ice cream tastes better and all of our local pools open. We honor those that have served while celebrating the long awaited return of our beloved Michigan Summer.
Welcome home warm sunshine, I have been waiting for you.
I think the best way to honor and memorialize people we have loved is by allowing other living things to continue to live. Indulging in a meatless meal is truly a celebration of life. It shows honor and respect for all living things. Here are five of my favorite compassionate Summer recipes to help you make some tasty memories.
