6/26 Melon All Fruit Pops
In the Summer I love making popsicles. I enjoy the indulgence of frozen treats and the sensibility of making it myself with delicious and readily available ingredients.
Right now all of the fruit available tastes like it is the best it has ever been. The berries have been addicting and the melon, luscious and sweet. It makes me feel abundant and limitless in my options for delicious things.
Melon tops my list of most favorite foods so I used watermelon for the base of these pops in the first round. Then, I replicated them using cantaloupe, which created an equally inspiring popsicle.
Use what you have and it will be sensational.
Part of the fun of these pops is experimenting with different fruit combos. For this recipe I used 3 1/2 oz paddle shaped popsicle molds.
In my experience they have been the easiest shape to find. I also think they look phenomenal with a kiwi slice nestled in the tip. The molds will probably set you back $3.00. Worth it when you consider all of the possibilities for experimental joy.

Ingredients
1 kiwi with skin removed and sliced. You will need 4 slices
1 nectarine with skin on and sliced. You will need 8 slices
8 raspberries
8 blueberries
1 1/2 C melon pureed in your blender or food processor
~Put a kiwi in the bottom of each mold. Follow with 2 slices of nectarine, two raspberries, then 2 blueberries.
~Pour pureed melon into molds on top of fruit. Tap molds on counter to allow bubbles to escape. You may need to run a sharp paring knife down the side of each mold to allow the melon juice to get to the bottom.
~Allow to freeze for at least four hours. When ready to serve, run molds under hot water for a second to encourage the popsicles to release.
Enjoy your all fruit sensational snack. I have noshed on these for breakfast and after a long, hot run. In both situations I was looking for a quick and healthy way to feed my body. What a cool way to do that with food that loves you back.
