9/18 Wrap it Up
Sometimes I get tired of bread and wraps and think, “Isn’t there a better way to eat a sandwich?” Well there is and it is inexpensive and abundantly healthy without even trying. I have started adding collard green wraps to create delicious sandwiches.
I know…it sounds like food for rabbits and hippies but I promise you….this is worth trying. Collards are at the apex of amazing right now at all of our farmers markets and grocery stores.
Collard greens are nutrient dense and a powerhouse in the cruciferious vegetable category. According WHFoods.org, they are loaded with Vitamins K, A, C, folate, manganese, calcium and fiber. This is the page on their site that explains more about the benefits of collard greens. It’s a great way to make eating this veggie fun for you and the kids.
It’s simple to choose them, look for the softest most supple collards you can find. Then prepare them by trimming off the spine without cutting through the collard, then wrap up your favorite ingredients like a burrito. Cut in half and enjoy. These make a great snack and are way more fun to find in your lunchbox than a typical sandwich on bread.
If you would like to soften your greens even more, you may run under hot water a few times then dry off…or pop in microwave for 10 seconds. Feel them before you purchase them and make sure they are soft and fresh. I recommend purchasing organic if you can for this one.
Here are a few of my favorite filling ingredients for collard green wraps:
~Cucumbers
~Spicy hummus (really any hummus)
~Sunflower shoots
~Fresh red/yellow pepper slices
~Baba ganoush
~Fresh basil
~Vegan lunch meat like Field Roast or Tofurky slices
Be creative and just start wrapping things up. You may find your new favorite sandwich.
