9/2 Chia Seed Jams

Happy Meatless Monday and Labor Day.

I have the most fun and easy recipes to share.  They will add some freshness and life to your breakfast routine.

One of my favorite things to have for breakfast is a toasty raisin english muffin with raw almond butter and jam. It feels comforting yet still energizing and has staying power throughout my morning. Recently my friend Brooke asked me if I had ever made Chia seed jam.

She explained that because of their bizarre gelatinous abilities, it could be made fresh and enjoyed without cooking, canning or heroic effort. Sounds great to me.  I made two varieties in approximately five minutes. It is that easy. Then chill and serve.

Chia Jam 003Chia Seed Raspberry Jam

Ingredients:

1 C fresh raspberries, rinsed

2 1/2 tsp agave nectar

1 Tbsp + 2 tsp chia seeds

1 Tbsp water

Make it Happen:

Put raspberries,  agave, chia seeds and water in a food processor. (I used a mini-one)  Blend until all ingredients are pureed together, about 15 seconds.  Put in airtight jar and refrigerate for at least one hour before serving.

Ingredients:

1 C fresh orange supremes (seeds, rind removed)

1 Tbsp finely chopped fresh ginger

1 Tbsp + 1/2 tsp chia seeds

1 Tbsp water

Make it Happen:

Put orange, ginger, chia seeds and water in a food processor.  Blend until all ingredients are pureed together, about 15 seconds.  Put in airtight jar and refrigerate for at least one hour before serving.

Note:  There are 2 different quantities of chia seeds used in the above jams.   The juiciness of the fruit may alter the amount of chia seeds you need to create a jam consistency.  It is easier to start with a bit less, as you can always put the jam back in the food processor and add more chia seeds if needed.

These were a cinch to make and are positively divine. Fresh fruit jams eclipse all other jellies, jams or spreads I have ever had. The best part is that you can create flavor combos to match your mood or menu.  How about strawberry rhubarb, blueberry lime or vanilla pear?  Toast will never be the same.

    You can find Chia seeds at Trader Joe’s, Whole Food’s and most health food stores.
