10/2 Space Age Drying Machine
Food poisoning update: Sandy and I are nearly at full strength and last night we enjoyed our first real meal since Monday. It was the most succulent veggie dog I have ever had. Thank you for all of your kind words and healing wishes. I appreciate them very much.
Yesterday as I walked around our “lighter” version of the local farmers market, I felt it for the first time….summer is really gone. The abundance of summer fruits and vegetables is rapidly becoming a distant memory. There are fewer vendors each week and less consumers in attendance as children are back in school and hectic schedules return to daily lives. It was just a few weeks ago that we could hardly eat the cucumbers or watermelon fast enough to keep up with what nature was producing. Now, these delectables are scarcely found fresh.
The market is still remarkably beautiful, but now, in a different way. It is becoming abundant with fall and winter squash, apples and the last of the gorgeous tomatoes.
I love this new crop of vegetables, but am already feeling the departure of our summertime produce. In a small effort to preserve a slice of the exquisite tastes of summer, I brought out the dehydrator to perform its magic. We enjoyed our canning with partial success, but I knew the space age drying machine was a fool proof way to stop the hands of time from ridding our meals of tomatoes and figs.
Dehydrating is so easy and the results are very gratifying. You can slice your fruits and veggies or leave them whole, simply plug in the dehydrator and leave it alone until the produce du jour is done. It is really that easy.
For fun, I sprinkled a bit of salt and pepper on the tomatoes. They came out perfectly like little sun-dried beauties. I was also quite happy with the results of the figs, they are dehydrated, but still juicy and robust with flavor. I look forward to experimenting with many other edibles.
