1/7 Distracted Cooking
Last night a friend was coming over for dinner. We were celebrating her birthday. Sandy and I had created a fun menu of things she would enjoy and I was making a Key Lime pie. Key Lime pie is extraordinary because in the Summer it is light and refreshing and in the winter it reminds me that Summer will eventually come again. As you know, Winter and I do not see eye to eye.
As we were running through the house getting our clean on, Sandy moved outside to put away our lighted topiary trees. Yesterday was unseasonably, and breathtakingly warm. Perfect time to put away the holiday decorations. Frequently after Chrstmas the temperature dips so dramatically that I just sit back and hope the lights explode off the bushes from the force of the cold. Then I wait until Spring and take them off.
So, the Key Lime pie is in its final stages of cooking when it needs to be watched like a hawk so it doesn’t overcook. I am doing that, I am a hawk. After 40 minutes I set the timer for three more minutes and walk outside, just for a split second to enjoy it. It is 50 degrees in the middle of a Michigan January for goodness sake. Before I know it I am taking the lights off of all the bushes. I am only in a fleece can you believe it?? This is pure bliss. I should take Chloe for a walk or put on my bathing suit and wash the KIA. What pie? Fifteen minutes later Sandy walks to the storm door window with a hot pad on her hand and a very grim look on her face. It returns to me….my pie was in the oven for three more minutes, approximately fifteen minutes ago.
I walk in the house on the verge of freaking out but with Sandy’s help and a quick shot of Merlot, realize that freaking out will not help me now. We get in the car to go re-purchase the ingredients to make another Key Lime pie. In that moment I realized nothing else will do. I could have easily made anything else for our friends birthday. Evidently, I love this recipe SO much that I was willing to make it twice. Therefore, I would like to share the link with you again in case you never saw it, missed it or forgot about it. It is good enough to make twice in the same afternoon.

i just looked at the recipe again and was thinking I really loved that pie. I saved it last time on my desktop and its still there. Maybe I will make it again. I made fruity cereal bars and split pea soup yesterday. I have this book callled The Happy Herbivore with some nice recipes.
